Chicken & Avocado Fettucine

  • 1 onion, peeled & quartered
  • 1 clove garlic, peeled
  • 6 shortcut bacon rashers, ripped in half
  • 20 g olive oil
  • 4 chicken thigh fillets (450-500g), cut into 2cm cubes
  • 100 g button mushrooms, sliced
  • 400 g cream
  • 200 g boiled water
  • 1 tablespoon vegetable stock concentrate
  • 300 g Fettucine
  • 1 avocado, quartered & sliced
  • salt & pepper

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Put onion, garlic & bacon in TM bowl and chop 5 seconds, speed 4. Scrape down any big bits of bacon and repeat for 5 seconds, speed 4.Scrape down sides, add oil and saute for 3 minutes, 100C, speed 1.Add the chicken, mushrooms, cream, water, stock, salt and pepper to the bowl and cook for 8 minutes, 100C, Counter-clockwise operation speed 1.Add fettucine through hole in lid so it's sticking out the top. Cook for 8 minutes, 100C, Counter-clockwise operation Gentle stir setting. Gently push the pasta down in the bowl as it's spinning and then use the spatula to push it into the liquid. This might take 1-2 minutes.Add the avocado through the hole in lid and cook for a further 2 minutes, 100C, Counter-clockwise operationGentle stir setting.

    Pour into thermoserver and enjoy!

    Made this tonight and it was absolutely delicious! Everything I was hoping it would be. It was a winner for my hubby and 15month old too! I added sliced spring onion in the last 2 minutes and stirred through the avo at the end. Yum yum!

    This our new family favourite!!  Highly recommend!  We do however add the shallots when it says to add avocado and then serve with sliced avocado.

    I agree with the spring onion instead of the avocado towards the end.  The avocado on top just before serving goes great.  Kids loved it.

    So easy and super tasty!!  I only had 300g chicken and 300g cream but just added a bit of extra water and the pasta was perfect.  I did as suggested and added spring onions when it says to add avocado and then added chopped spinach and avocado in the thermoserver.  Will make this recipe again and again.

  • I made this for my kids

    I made this for my kids lastnight, used spelt spagetti and added 400g & used coconut cream, also put a few handfuls of frozen peas into the thermoserver then i tipped the meal on top and let it sit for 2 mins - Kids loved it and will make it again for them.  Also loads left over for lunchboxes. Thanks

    I have made this twice now. A favourite . We have found that avocado goes a bit bitter if reheating later. I keep it out now and add when serving . This works well.
