  • 2 tablespoon coconut oil
  • 400 g chicken thigh fillet, diced
  • 3 tablespoon Mexican spice mix OR taco seasoning/powder
  • 1 large onion
  • 4 cloves garlic
  • 1 can Ayam coconut cream
  • 200 g chopped tomatoes
  • 300 g Penne Pasta
  • pinch salt
  • 200 g Liquid Chicken Stock
  • 1 large red capsicum
  • 1 Large Zuccini sliced, `

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Coat chicken in half the spice mix and set aside

  2. Place onion and garlic into the bowl and chop speed 5 for 2 seconds

     

    Add zuchini and capsicum and chop speed 4-5 for 5 seconds

  3. Add remaing spice mix and coconut oil and cook for 2 mintues 100 degrees Counter-clockwise operation speed soft

  4. Add chicken and cook for 3 mintues 100 degrees Counter-clockwise operation soft

  5. Add stock, tomatoes and coconut cream to bowl and cookf or 10 minutes 100 degrees Counter-clockwise operation speed soft with measuring cup removed and basket on top of lid

  6. Add pasta and salt. Use spatula to ensure pasta is submerged. Then cook for 8-10 minutes 100 degrees Counter-clockwise operation speed soft with MC removed and basket on top of lid. 

  7. Check pasta is cooked - extend cooking time for 3 minutes if required

Tip

If wanting GF altenative for this recipe use GF pasta. I cook GF pasta separately, rinse starch from past and add to the sauce at the end.

    This was delicious! I have a TM31 and was able to just fit it all in level with the maximum full line, by leaving 100g chicken stock out (I put it in later, after the liquid had reduced a bit). I had to add extra Mexican spice mix, but that may have been due to the brand I used. It tasted even better as leftovers the next day!

    Making this right now! What size can of coconut cream? 270g or 400g? And yes, info on when to put the capsicum and zuchinni in would be great.
