Creamy tomato, chicken and pasta
- 1 brown onion, Cut in half
- 2 garlic cloves
- parsley leaf, fresh, Handful
- 1 red capsicum
- 30gm olive oil
- 4 ripe tomatoes, Chopped
- 1 chicken breast fillet, Cubed
- heaped tablespoons tomato puree
- 100gm white wine, dry
- 100gm cream
- heaped tablespoons chicken stock paste
- to taste ground black pepper
- fresh basil, Chopped finely
Pasta
- 200 grams penne pasta, or your favourite
- to taste smooth ricotta cheese
- to taste fetta cheese, crumbled
- 4 leaves fresh spinach leaves, Finely chopped

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add onion, garlic, parsley and capsicum to "Closed lid"
4 sec, speed 7. Scrape down sides. If needed 3 sec, speed 7
Add olive oil - 3mins 100 degrees speed 1
Add tomatoes, chicken, purée, white wine, cream, stock, pepper and basil to "Closed lid"
15 mins, 120 degrees, speed 1.
Cook pasta on stove top while chicken cooks.
Drain pasta & return to pan it was cooked in. Add spinach and cheeses. Mix well
Pour chicken sauce over pasta.
Serve or or add grated cheese and brown in oven.

Tip
Transfer into casserole and add grated Parmesan or your favourite cheese. Place in over to melt cheese.

Good recipe but next time I'll cook the sauce first for 15 mins then add the chicken to a hot sauce rather than a cold one - Other than that it's a quick easy dinner!
