Pasta Sauce
- 1 red capsicum
- 1 carrot
- 1 onion
- 3 cloves garlic
- 2 sticks Celery
- 15 g olive oil
- 400 g fresh tomatoes
- 400 g canned tomatoes
- 1 small zucchini
- 50 g tomato paste
- 50 g wine, I used red wine but white wine is great also
- 20 g vegetable stock
- 1 teaspoon fennel seeds

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Place capsicum and carrot in the bowl "Closed lid" . Chop
5 secs/ speed 5. Remove from bowl and set aside.
2. Place onion, celery and garlic in bowl "Closed lid" and chop
5 secs/speed 5.
3. Place oil into bowl "Closed lid" and saute
4mins/100c/ speed 1.
4. Place tomato and zucchini into bowl "Closed lid" chop
5 sec/speed 6.
5. place tinned tomatoes, carrot, capsicum, tomatoe paste, wine, veggie stock and fennel seeds into bowl "Closed lid" cook
30 mins/100c/ "Counter-clockwise operation" speed 1. Place simmer basket on bowl to prevent spattering.

What I love about this recipe
What I love about this recipe is I can use it as a base & just throw in what I have left in the fridge.
I use some left over cameralised onion jam from Christmas, threw in some fruit chutney that had a teaspoon left in it & used fresh tomatoes & herbs from my garden - absolutly delish... Makes a different pasta sauce each time.
