Meatlovers risotto

  • 1 onion
  • 1 garlic clove
  • 40g oilve oil
  • 4 Roma tomatoes, chopped
  • 8 sun dried tomatoes
  • 20 basil leaves, fresh
  • 400g chicken breast, chopped
  • 125ml dry white wine
  • 1 Tbs veggie stock concentrate
  • 600g water
  • 300g arborio rice
  • 1/3 C Grated Parmesan Cheese
  • 2 Tbs Philly Cream Cheese
  • 250gm Bacon, fat removed & sliced
  • 1 Chorizo sausage, sliced

Recipe's preparation

    Meatlovers risotto
  1. Place onion and garlic in TM bowl and chop for 5-7 seconds on speed 7

  2. Add 40g oil, bacon, chorizo and saute 2 minutes, 100 degrees on speed 2

  3. Add Roma tomatoes, sundried tomatoes and basil, chop for 3 seconds on speed 7

  4. Add 400g chopped chicken, cook for 2 minutes at 100 degrees on reverse speed 2 Counter-clockwise operation

  5.  Add 125ml wine, 600g water, 1 Tbs Veggie Stock Concentrate and 300g arborio rice

     

     

  6. Cook for 19 minutes at 100 degrees on Reverse speed 2 Counter-clockwise operation

  7. Place in Thermoserve and stir through 1/3 cup grated parmesan cheese and 2 Tbs of Philly cream cheese. Let sit for 5 minutes.

Tip

May need to reduce cooking speed back to Speed 1 during cooking process. Check at about 10 minute mark.
Spice it up with some chilli  - add to your liking. Chop chilli with garlic and onion in step one.
