Pasta sauce with mushrooms

  • 6 leaves basil
  • 4 sprigs Garlic chives
  • 3 cloves garlic
  • 1 onion, quartered
  • 30 grams olive oil
  • 800 grams tomatoes, fresh, quartered
  • 300 grams water
  • 1 heaped teaspoon TM vegie stock concentrate

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place herbs, garlic and onions into TM bowl and pulverise for 1 minute on speed 8.

    Scrape down sides of bowl and add oil.

    Saute for 5 mins 100deg speed 2

    Add all other ingredients except mushrooms and cook 20 mins on varoma  on speed 1. Use simmering basket in place of measuring cup to allow steam to escape.

    Turn to speed 4 for 5 seconds.

    Scrape down sides of bowl and add mushrooms.  Set to Counter-clockwise operation speed Gentle stir settingfor 10 mins on varoma.

     

    Serve with your favourite pasta, a bit of ricotta or feta and some snow peas and broccoli - or whatever takes your fancy.
