Prawn & Calamari Risotto

Prawn & Calamari Risotto

  • 50 grams Parmesan cheese, Fresh/Block
  • 30 grams olive oil
  • 1/2 onion
  • 1 clove garlic
  • Generous handful of Fresh Parsley
  • 250 grams arborio rice
  • 85 grams white wine
  • 250 grams tomato passata
  • 550 grams water
  • 2 tbsp EDC Stock Paste
  • 300 grams Fresh Peeled Prawns
  • 150-200 grams Calamari, (I used rings)
  • dried chilli flakes, (to taste)
  • salt & pepper, (to taste)

Recipe's preparation

    Method
  1. 1.        Place the Parmesan Cheese into TM bowl. Pulverise for 10 seconds on speed 9 – set aside

     

     

    2.        Add Onion, Garlic and Parsley into TM bowl and chop for 5 seconds on speed 7, scrape down.

     

    3.        Add Oil and sauté for 3 min, Varoma, speed 1.

     

    4.        Attach butterfly. Add Rice and Wine, sauté for 2 mins, 100 degrees, reverse, speed 1.

     

    5.        Add Passata, Water, Stock Paste and Chilli, cook for 14 mins, 100 degrees, reverse, speed 1.

     

    6.        Add Prawns and Calamari, cook for a further 3-4 mins, 100 degrees, reverse, speed 1.

     

    7.        Pour the risotto into the Thermo Server, stir through Parmesan and Salt and Pepper to taste (ensure to taste before adding any additional Salt), allow to stand for at least 5 mins, then serve.

     

    Suggestions:

     

    1.        Vegetable stock can be used in place of water and stock paste

     

     

    2.        It’s nice with the addition of Kalamata Olives

     

    2.        This recipe made enough to serve myself and 2 kids but would be sufficient for 2 adults

    Absolutely delicious! Calamari and prawns cooked to perfection in  the recommended time. Definately will make this again. I also added juice of half a lemon and 3 handfuls of  baby spinach before putting it in the Thermoserve.
