Red Lentil Dhal with Spinach and Red Rice Low GI

  • 150 grams of red rice
  • 150 grams of red lentils, rinsed
  • 1 onion, peeled and quartered
  • 3 cloves of garlic, peeled
  • 1 level tablespoon of ground tumeric
  • 1/4 - 1/2 level teaspoon of chilli powder use 1/4 if you do not like a bite on the palate
  • 1 level tablespoon of cumin seeds
  • 1/2 level teaspoon of ground ginger
  • 30 grams of olive oil
  • 2 400 gram tins of diced tomatoes
  • 1 400 gram tin of chick peas, rinsed
  • 80 grams of baby spinach leaves
  • 2 level tablespoons of chopped parsley
  • yogurt, mango chutney, nan bread for serving

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Red rice

    Fill the bowl with 1.5 litres of water, add red rice to basket and cook 25 mins 110deg, speed 4 - keep warm in a thermoserver

    Rinse bowl and dry

    Add spices and cook 3 minutes, 100 deg, speed 1, MC off

    Add onion, garlic - chop 5 sec, speed 5, scrape down bowl

    Add oil and cook 3 mins, 100 deg, speed 1

    Add tomotoes and lentils, cook 15 mins, 100 deg, reverse, speed 1.5, MC off, basket on top

    Add chick peas, cook 3 minutes, 100deg, reverse, speed 1

    Add baby spinach and stir through with the spatula till wilted

    Serve with Red Rice a dollop of yogurt sprinkled with parsley or mango chutney and nan bread

    Absolutely delicious! I always take this to BBQs and i always leave with an empty bowl!
    I sometimes use homemade passata and fresh tomatoes instead of the tinned. Always a hit!
