Seafood Marinara Risotto
- 50 g Parmesan cheese
- 1 - 2 stalks shallots
- 1 sprig fresh parsley
- 2 cloves garlic
- 2 cm fresh ginger
- 40 g olive oil
- 1 can Coconut Cream 400ml
- 1 can Equivalent in Water
- 2 - 3 level tsp TMX Veggie Stock Paste
- 300 g arborio rice
- 500 g Marinara Mix
- salt and pepper to taste

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place the Parmesan Cheese into TM Bowl and pulverise for 10 seconds / sp 9 set aside in container
- Place fresh herbs, garlic, ginger and shallots into TM Bowl and chop for 5-7 seconds / sp 5
- Add oil and saute for 2.5 mins / 100º C / sp 2
- Insert Butterfly and add Marina Mix with half a can of coconut creme and cook for 2.5 mins / 100º C / Reverse / sp 2
- Add remaining coconut creme, rice, water, stock, salt and pepper to taste and cook for 17 mins / 100º C / Reverse / sp 2
- Pour into Thermoserver and stir in Parmesan Cheese gently
- Garnish with green pieces of shallots and serve

Really delicious. I used my TM31, just had to lower the temp to 90 closer to the end of cooking time. 2 tablespoons of stock and no added salt made this perfect for our family. Thanks for sharing.
