      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Weigh
  1. Weigh out 300g sushi rice into simmering basket

    Rinse rice until water runs clear then return to TM
  2. Add and cook
  3. Add 1000g room temp water to the bowl.
  4. 15 minutes
    Varoma
    Speed 2
    MC on
  5. Continue cooking
  6. Discard boiling water (carefully!) and return to TM

    5 minutes
    No heat
    Gentle stir setting
    MC on
  7. Cool and season
  8. Immediately remove cooked rice and spread out in a bowl for maximum surface area to cool quickly.

    Pour over 2 tablespoons of sushi seasoning (see notes) and gently fold while fanning to cool the rice until room temperature.
  9. Enjoy
  10. Add to nori with all your favourite sushi fillings

Tip

Sushi seasoning can be made:
1/2 Cup rice vinegar
2 Tablespoons caster sugar
1/2 Teaspoon salt

    This made a really good quantity of sushi rice. I had to increase the cooking time by 5 minutes to get the right texture, but i would think temperature of water would effect how quickly it gets to varoma. leaving it to steam dry at the end is excellent.
    Also used the authors sushi seasoning recipe, and tasted authentic. Easier than buying a bottle.
