Green pesto vegetable soup

  • 1 tablespoon olive oil
  • 1 Brown oil cut into 4, Medium sized1
  • 1 white potato, Approx 150g
  • 2 cloves garlic
  • 2 Zucchini’s, 350g
  • 600 grams water
  • 125 grams thickened cream
  • 240 grams frozen peas
  • 100g pasta
  • 1 jars pesto, basil, Thermomix recipe
  • 1 heaped tablespoon Vegetable stock paste, Add more to taste also salt and pepper

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Soup
  1. Make a batch of thermomix basil pesto set aside clean bowl then
    add onion garlic and potato and oil chop 3 seconds/sp7 scrape down cook 5 mins/120/speed 1.5

    add zucchini cook for further 2min/120/1.5

    add water and stock cook for 10mins / 100/1.5

    while this was cooking I cooked pasta as per instructions adding 60g of the peas in the last 2mins of cooking drain add a 1tbs pesto and stir through and set aside

    Add rest of peas to soup and cook a further 5 mins/100/sp 1.5
    add the cream and the process slowly to speed 8 for approx 30secs

    i then put soup in bowl added pasta and sprinkled with toasted papitas
