Clean Eating Pear and Apple Muffins

  • 300 g Self Raising Flour, Feel free to use oat flour for a gluten free version
  • 2 Large overripe pears
  • 150 g Apples (any kind would suffice), I measured this after it was chopped and peeled
  • 1 level tbsp baking powder
  • 1/2 level tbsp cinnamon
  • 30 g Maple syrup
  • 85 g raisins
  • 100 g soy milk

Recipe's preparation

  1. Preheat oven to 180fan forced, 200 conventional

    Core and roughly chop pears, put in TM and puree. Gradually increase speed up to 7, about 20 seconds.
  2. Add in maple syrup, baking powder, cinnamon. Mix 5 seconds speed 5.
  3. Add in flour and soy milk, combine 20 seconds, speed 6.
  4. Peel and chop apple pieces (I wanted them to be chunky pieces), add to TM with raisins mix 10 seconds, speed 5, reverse.
  5. Scoop into prepared muffin tin (I use silicone patty pans so they dont stick to the muffin tray) and bake for approx 20 minutes.

Tip

I had so much fun creating this recipe! My mum will be recreating these with oat flour to make a gluten free version! They came out light and fluffy! Even hubby loved them!

This made 12 adult size muffins plus 6 kiddy/lunchbox size muffins. I could have made 24 small ones or maybe scooped the extra to make 12 extra large ones.
