Apricot and Cashew Roll

  • 200 g cream cheese
  • 100 g dried apricots
  • 100 g Roasted Cashews unsalted

Recipe's preparation

    Apricot and Cashew Roll
  1. 1.Add cashew nuts and press turbo once to crush nuts up, remove from bowl and place out on some baking paper like in photo.

     

    2. Add apricots to bowl and chop for 6 seconds/Speed 6.

     

    3. Add cream cheese and mix Speed 6/3seconds, scrape down sides and mix another 3second/ speed 6.

     

     

  2. 4. Roll paper around mixture making sure all is covered in nuts, then use cling wrap or foil to securely wrap into a sausage shape.

     

    5. Allow to set in fridge for at least an hour, then serve with crackers or on a cheese platter. It's even nice just on its own.

Tip

Recipe could be divided in to two smaller rolls or throw everything in together as a dip. Or if you had more time it could be rolled into balls covered with the nuts.

 

A quick and easy thing to make when unexpected guests are coming over, try adding mixed dried fruit roll in poppy seed. If needed you could serve straight away, but nice if it has firmed up in the fridge for a little bit.
