I have now made this recipe twice with similar results. The outcome is delicious (the second time I spiced it up a little with chili) but much more like a spicy apricot sauce than chutney. I know I must be doing something wrong as I also end up with 3 x 300 ml jars and 3 x 200 ml bottles of sauce, although this may be OK as the recipe indicates an outcome of 3 bottles without specifying their size. Am I doing something wrong or is a sauce-like consistency the usual outcome?

How thick should the chutney
How thick should the chutney come out? I've just made a batch and I poured it into my container and it's quite thin. Will it thicken up a bit on cooling? Or do I need to cook it for longer?

Thanks for the recipe Charlotte. I added chilli to your recipe but otherwise followed it precisely. It worked very well, I will use this as a template to make a variety of apricot based chutneys as I have a large tree in my backyard.

I agree with all the comments on this recipe Charlie - great to see the step by step photos and I just love that brilliant apricot coloured looking relish that you have ended up with. Don't you just love the Thermomix for bringing out the vibrant colours of fruit and vegies in jams and relishes and chutneys? They look so much more appetizing than store bought ones and have to be way better for you. Well done all round!

I certainly think varying the fruit will work, not sure about ommitting the ginger but try and I would love to hear how it turns out. The original recipe was in an indian curry book of mine and originally has chilli powder in it and the recipe makes about 3 X 375ml jars the picture gives an indication of the size of jars I use. Enjoy
