Aunty D's Ezi Tomato Sauce

Ingredients

Tomato Sauce

  • 1000 grams tomatoes, quartered, (1 kilo)
  • 2 onions, large
  • 3 cloves garlic
  • 1-2 cm piece of ginger peeled
  • 100 grams Rapadura or Raw Sugar
  • 2 green apples, quartered
  • 1.5 tablespoon Wild's Ezi-Sauce
  • 1 heaped teaspoon Himalayan salt (or rock salt)
  • pepper to taste

Recipe's preparation

    Tomato Sauce
  1. Quarter the tomatoes and chop for 5 seconds on speed 5
  2. Place chopped tomatoes in basket and strain for 30 - 60 minutes & set aside.

  3. Chop garlic, onions and ginger for 5 seconds on speed 5

  4. Put in remaining ingredients including drained tomatoes and cook for 1 hour at 100 degrees, speed 1

  5. When finished, gradually turn to speed 9, and mix for 20 seconds.

    i make a small portion of my own 'ezy sauce'
    Nutmeg
    cloves
    pepper
    chilli
    all spice
    ginger
    crushed together then add 2tbsp vinegar

    I freeze portions of ezy sauce in silicon muffin cups, so when I do another batch I just pop one out of the freezer, no wastage!

    Tastes just like my mums stovetop version with Ezy sauce. I reduced the sugar to 80gms and used Pink Lady apples as that's all I had. Made 3.5 small bottles. Thanks for the conversion, now the sauce making tradition in my family can live on, as I was never going to make it on the stovetop.

    You have just saved me hours of my life. I always made sauce the old way and thought I'd try your recipe. Better consistency, hours faster and the same great taste.  Anything to save me de skinning tomatoes is a winner with me!

    You can find Ezy Sauce in Foodland. My local Woollies and Coles don't stock it, but worth asking in case yours do.I'll make a point of weighing how much sauce it makes next batch (soon) and update the recipe.I contacted Cerebos to find out how long you can keep Ezy Sauce in the fridge for. Their reply "We recommend keeping it sealed in the fridge for no longer than 3-4 days".

    This is the fist sauce recipe I've ever made and I'm so impressed.  My 11 year old son who is addicted to bough sauce even said I have to make more of it cause it's so good and much more flavour in it.  Thank you fo such an easy wonderful recipe to follow

    Thanks for the positive feedback Cathy tmrc_emoticons.)I have to be honest here.. my kids are slightly a bit maybe a lot addicted to tomato sauce. So I haven't been able to keep it long enough to find out how long it will last for! We used to store them sealed in the cupboard. I can't see why you couldn't (providing it's sterilized) until it's opened.I feel the same! I grew up on my Aunty's tomato sauce. I've tried the EDC recipe - which is good - but it can't really compare. I was stunned when I rang my Aunt and asked for her "secret" recipe - and she told me to go to Foodland and buy a bottle of Ezi-Sauce, the recipe is on the back. lol!You may want to cut down on the sugar. I'm not sure whether to change it or not. I followed the ratio to the back of the bottle but personally find it too sweet.

    Thanks so much for posting this. I will give it a go if i can get my hands on some EZI sauce. i moved to Perth from SA,  20 years ago and always made my mums EZI sauce recipe (the traditional way before Thermie) I always had such a hard time finiding it in WA. I have been doing the ketchup from the EDC and also the My way of cooking cookbook. I love the EDC recip but my husband isnt quite convinced (probably cause its not exactly like the old EZI sauce recipe) So cant wait to give it a go . I  always put Apple in mine too think it make a thicker sauce than the plum.

    how long does this last. I fine the others only last in the fridge not in steralised bottles in the cupboard. probably from the lack of cooking in the Thermomix. But wow who wants to stand stirring a pot for 7 hours tmrc_emoticons.~
