Caramelised Onion and Sage Relish
- 16 sage leaves
- 4 cloves garlic
- 800 g brown onion, sliced (or quartered, refer recipe), approximately 4 large onions
- 60 g olive oil
- 2 teaspoons black mustard seeds
- 160 g balsamic vinegar
- 50 g brown sugar

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

Put sage in
and chop 3sec/sp1. Set aside. No need to wash
.

Add garlic, chop, 3sec/sp9. Scrape down with spatula.

Add sliced onion. Alternatively, add quartered onion and chop 3sec/sp4.

Add oil and sauté 15min/Varoma/
/sp2, MC off.

Add black mustard seeds and cook for a further 1min /
/sp2, MC off.

Add balsamic vingear and sugar and cook for 18min/
/Varoma/Sp2.

Add reserved sage and cook for a further 2mins/
/Varoma/Sp2.

Transfer to jars. Allow relish to warm jar and then place the lid on and turn upsidedown for at least 15 minutes to activate vacuum seal.

Refridgerate and use with roast pork, duck, chicken, meat of choice or even toast. Enjoy!

So delicious. I didn’t have fresh sage so used ground. Didn’t have black mustard seeds so just used the whole grain mustard I had in my fridge. Very easy.

Beautiful recipe. I also chopped the sage on a higher speed. Probably just a typo, no biggie. For a chunkier relish I cubed my onions. Thanks for sharing.

I found I needed to turn up the speed to chop up the sage as #1 just seemed to blow them around the bowl.
I got one decent sized jar out of this, and very tasty it is!!
