CHICKEN,DILL,RED ONION SANDWICH SPREAD

Ingredients

SPREAD MIX

  • 900 grams chicken breast
  • 900 grams boiling water
  • 1 tsp Garlic powder(optional)
  • 1 tsp Chicken stock powder(optional), (homemade if possible)
  • 20 grams olive oil
  • 1 medium red onion
  • 1 small lebanese cucumber, ( chopped roughly(not too small)
  • 5-10 grams fresh dill, ( just under a small handful)
  • 1 sprig fresh parsley
  • 150 grams Whole egg mayo
  • 60 grams sour cream
  • 10 grams lemon juice(fresh)
  • salt and pepper to taste

Recipe's preparation

    CHICKEN DILL RED ONION SANDWICH SPREAD
  1. 1. Place whole chicken breasts in varoma top tray. Season with good lashings of salt and pepper(I use himalayan salt)

    2. Pour boiling hot water into jug( I use hot water to fasten the cooking on a school morning). place varoma tray on top

    3. Cook chicken for 20 minutes VAROMA temp speed 3

    4.Put chicken aside, clean jug out or what I do is heat empty jug for 1 minute varoma temp speed 2 mc off(it dries inside). While this is heating cut chicken into big pieces.

    5. Place onion, garlic powder and chicken stock powder blitz 5 seconds speed 3

    6.add 20 gms olive oil and saute 5 mins varoma speed 1. Set aside when done to cool down

    7. place chopped cucumber,dill,parsley,lemon juice,mayo,sour cream, salt pepper and finally onion. Blitzed speed 4 5-10 seconds( depending on how fine you want it). I like mine a little chunky

    8. add chicken breast,season with salt and pepper then mix 10 secs REVERSE speed 3 or 4( depending on how fine you want it) 

    9. Spread onto bread,wrap or add more salad and be carb freetmrc_emoticons.)

Tip

1. I make my own  chicken stock powder( I use Tenina's recipe) but shop bought is fine as well

2. You can use fresh garlic just 1 blitzed with the onion. I use the garlic powder so its not too strong for the kids for school lunches

3. I also use my own mayo but shop bought is fine too:

4. 1 kg of chicken is fine too if you buy in 1 kg lots.

5. This can make  a lot of sandwiches depending on how much you want to spread on.

6. This is great with losts of salt and pepper. Season it to your liking
