Curried Mango Chutney

  • 1 big garlic clove, (or 2 small)
  • 15 g fresh ginger, peeled
  • 120 g onion, peeled and quartered
  • 120 g red capsicum, quartered
  • 30 g olive oil
  • 180 g apple cider vinegar
  • 15 g curry powder, (20g for a spicy version)
  • 1 1/2 teaspoons salt
  • 30 g water
  • 375 g raw sugar
  • 150 g sultanas
  • 1000 g Fresh Mango, chopped in 3cm cubes
  • 200 g fresh pineapple, chopped in 1 cm cubes

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add garlic, ginger, onion and capsicum to the bowl. Chop 6 sec/speed 5. Scrape down the sides of the bowl.

  2. Add oil and saute 5min/varoma/speed 1 MC off.

  3. Add vinegar, curry powder, salt and water to the bowl and cook 10min/100℃/speed 1 MC on.

  4. Add sugar, sultanas, mango and pineapple and cook 40min/100℃/Counter-clockwise operation/speed 2, MC on.

  5. Check consistency and cook longer if you need to.
