Dad’s Sauce - Easy and healthy gluten free tomato ketchup.

  • 1200 grams ripe tomatoes, Cored, skin on.
  • 1 Red apple, Cored, skin on.
  • 1 red capsicum, Cored, seeds removed.
  • 1 red onion
  • 100 grams apple cider vinegar
  • 50 grams red wine vinegar
  • 125 grams honey
  • 70 grams sultanas
  • 0.5 level teaspoons ground allspice
  • 0.5 level teaspoons ground ginger
  • 0.25 level teaspoons ground cloves
  • 2 level teaspoons salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Sourcing ingredients.
  1. My local grocer always sells bags of over ripe tomatoes quite cheap. They are always over 1kg so 1200 grams is just a rough guide.
    I usually grab a tennis ball sized onion, a cricket ball sized apple and a softball sized capsicum.
  2. Creating the sauce.
  3. Wash and core tomatoes and put into the bowl, this will be reasonably full so 10 secs on speed 10 will help create more room in the bowl.
  4. Wash and then core and dice apple and capsicum, peel and dice onion. Add to bowl and blitz for 15 secs speed 10.
  5. Add remaining ingredients to the bowl and cook for 45 mins Varoma temp with the MC lid upside down on the lid, speed 2.5.
  6. When finished blitz for 1 min speed 10. Transfer to a sanitized glass bottle or jar and store upside down until cooled before refrigerating.

Tip

The basket on top gets blocked and from the splatter and the MC on causes boil overs. The MC upside down is the best I can find so far to prevent splatter and boil over issues.

    Great taste, terrific colour and smell and easy to prepare. We would prefer it to be slightly thicker but will thicken when I cook the next batch
