  • 500-600 grams Full Fat pouring Cream, (whipping)
  • 500 grams water, chilled
  • 15 g Port / Sherry / Orange Juice
  • 15 g Treacle syrup
  • 1 --- peel of Orange rind
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon mixed spice
  • 1/4 teaspoon Vanilla Paste / essence
  • 1/4 teaspoon cinnamon
  • 1 --- clove

Recipe's preparation

    Butter
  1. Make TM Butter as per recipe in The Everyday Cookbook (EDC)

  2. Syrup
  3. 1. Place Orange rind in bowl and zest speed 7 for 10 secs

    Scrape down bowl

    2. Add Port/ Sherry/ Orange juice, Treacle, Cinnamon, Nutmeg, Mixed Spice, Vanilla Paste and clove

    * Try not to get spices onto blade when adding into bowl*

    3. Cook for 3 mins, speed 2

    4. Allow to cool to room temperature

    5. Add half portion of butter and mix speed 3, 30 seconds

    NOTE - note all juices will be soaked into butter

    6. Remove clove from the butter

    7. Place onto glad wrap and roll into log.  Refrigerate to harden

    ** The butter can also be rolled between 2 sheets of baking paper to a thickness of about 5mm, refrigerated, then cut out into Christmas shapes.

Tip

Deck the Halls of butter is delicious served on Christmas cake, or plain cake to give extra flavour

 

It also makes a wonderful Christmas breakfast of Pikelets (with currants added) , Toast or  Scones
