      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Weigh oil into bowl and then add garlic cloves (peeled and lightly crushed).
  2. Gently heat oil to infuse with garlic. 20minutes/Varoma/Speed 1/Reverse.
  3. Allow oil to cool. Once cooled – strain oil into a bowl and set garlic cloves aside.
  4. Crack 2 eggs into a separate bowl and set aside.
  5. Place salt and vinegar into mixing bowl and cook 3 min/100°C/speed 1.
  6. Remove MC from lid. With blades rotating Speed 3/30 Seconds - add eggs through the hole of the mixing bowl lid.
  7. Insert measuring cup, with blades rotating, mix 1 min 30 sec/speed 6, and very slowly pour oil onto mixing bowl lid, letting it trickle into mixing bowl, around the edges of the measuring cup. This will emulsify all the ingredients.
  8. Scrape down sides of bowl.
  9. Add roughly chopped herbs, drained garlic cloves, Dijon mustard and lemon juice (see tips).
  10. Mix Speed 5, 10 seconds. Repeat if needed.
  11. Use immediately or store in a sealed jar in the fridge until needed. Use the bowl lid as a funnel over the top of your jar to help get it all into the jar, with no spills/wastage.

Tip

Crushing the garlic cloves allows for more intense infusion and also softens the cloves, making mixing in step 9 easier.
At Step 9 - add however many of the garlic cloves you desire. If you don't use them all, do not throw the remaining cloves out. Keep for another dish, or even use to make Vegetable Stock!

You can use Olive Oil instead of Grapeseed, however, ensure it is Extra Light Olive Oil so it’s not overpowering in flavour.

Herbs - parsely, chives and rosemary all work well.

Lemon juice - add to your taste preference, you may think it tastes ok without.
