If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place apricots, halved with seeds removed into TM bowl.
Add lemon juice if using.
Add 1 tablespoon of the sugar.
Cook 15 minutes on Varoma temperature, Speed 4 with steaming basket on top. It should not boil over but if concerned turn temperature down to 100 and cook another 5 minutes.
Fruit should now be soft.
Add remainder of sugar.
Cook another 10 minutes or until jam jells from spoon/spatula as shown in photo, on Varoma Temperature, Speed 4 with steaming basket on top.
I put my clean bottles into the oven on 100 to heat & sterilse them while jam is cooking for the last 10 minutes. Can also use boiling water.
Pour into hot sterilised bottles and seal imediately, make sure lids are tightened.

Really nice and easy to do. Like others I reduced the speed to 3 and the sugar to 400g (and it's still very very sweet).
I also tried a batch with 1/2 tsp cinnamon, surprisingly nice and subtle.

I had some spray free apricots left over from...
I had some spray free apricots left over from Christmas & so did my son-in-law. Between both of us we had enough to make a batch of jam, so on Boxing Day I made up this recipe. I did cut back the sugar slightly & it was still amazing. So, then I made a batch of scones in my caravan oven (first time used) & I had 16 people for morning tea in our camp site to share this lovely freshly made jam & scones. Yummo!! delicious.

I couldn't see any reason why it was necessary to have the Thermie rattling away at speed 4, so reduced to 3 and was fine. Used reverse so the jam had a little texture. Cut sugar down by half, and still set beautifully.

This is really yum. I like less sugar, so used 400g, it was still pretty sweet but had the nice tart apricot flavour to it. No burning on the bottom either (I did the longer time at 100 degrees option).

I just made this recipe today with some defrosted apricots, just shy of the right amount so I topped up with apple and holy moly it’s the best apricot jam I’ve tasted! Good full flavour and not too sweet, nice and thick too. Made 3 jars and a little bit to use straight away

I used 400g raw sugar in one batch, 300g in another, no lemon and followed cooking instructions exactly as above with no mess. Both worked perfectly re consistency. 400g sugar perfect for my tastes.
PS It is quite noisy to make at these speeds so don't plan on watching TV in the background while you do it!

Made two batches using 1kg apricots, 500g sugar & 20g lemon juice
1st batch cooked as per recipe, made 4 x 300ml jars - seems a little runny on cooling
2nd batch cooked for 15 mins after sugar added, made 2 X 300ml & 1 X 375ml jars - looks a better consistency.
No splatter.

Very easy to make and so quick! I put a bit less sugar and cooked for the 25 min advised in the recipe. The jam set perfectly.

Lovely recipe and easy to make thanks. I started making this with my TM31 before realising it was meant for the TM5. I didn't have any problems with the volumes but put the varoma on top just in case. It didn't overflow so probably the basket would have been fine. Next time I think I'd chop the fruit on a higher speed to begin with as the whole machine was moving around a bit for the first several minutes. I also extended the cooking time by 10 minutes and it set beautifully.

I love this Apricot Jam, and for tonights dinner I am adding some cream and pouring it over my chicken. I have coated my chicken in SR Flour and Cajun seasoning.
