Garlic mayonnaise (Double batch)

  • 500 g oil, E.g rice bran oil
  • 2 eggs
  • 2 teaspoons vinegar, E.g Apple cider vinegar
  • 2-4 teaspoons mustard, E.g Dijon
  • 2 pinches freshly ground pepper
  • 1/2 tsp salt
  • 2 tsp Garlic powder

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Place a jug on to mixing bowl and weigh oil into jug. Set aside.
  2. Place eggs, vinegar, mustard, pepper, salt and garlic powder into mixing bowl. Mix for 1 minute 30 seconds/ Speed 4. Very slowly pour oil onto mixing bowl lid letting it trickle into mixing bowl to emulsify.
  3. Transfer into a sealable jar and place into fridge until ready to use.
