Ingredients

Julie's Tomato Chutney

  • 600 g ripe tomatoes
  • 1 onion, peeled & quartered
  • 1 clove garlic, peeled
  • 1 fresh red chilli, cut in pieces
  • 2 level teaspoons salt
  • 230 g Soft brown sugar
  • 1 level tsp curry powder, Baba's or similar
  • 1/2 level tsp mustard powder
  • 3 whole cloves
  • 30 g Worcestershire sauce
  • 230 g vinegar, malt
  • 30 g sultanas
  • 2 bay leaves

Recipe's preparation

  1. Sterilise 2 300ml jars with lids
  2. Place 250ml water in TM bowl
    Measure 600g tomatoes into Varoma, then score with a cross the skin of the end opposite the stem. Arrange tomatoes so that some holes remain uncovered to allow steam release.

  3. When steaming is done, carefully & quickly transfer tomatoes into ice water bath. Leave in for a couple of minutes, then skins should peel off easily.
  4. Put tomatoes back in Varoma and place over a large bowl.
  5. Place onion, garlic and chilli into TM bowl and chop 2sec/Sp 6
  6. Add to Varoma with tomatoes, sprinkle with the salt and stir to combine. Leave to drain over large bowl for at least 1 hour, or overnight. Discard drained liquid.
  7. Place all other ingredients in TM bowl and add tomato mixture.
    Place empty Varoma without lid in place of MC.
    Cook 30mins/120deg/Counter-clockwise operation"Counter-clockwise operation" /Speed 0.5
  8. Carefully pour hot relish into sterilised jars, seal and invert for 10mins.
    Cool completely, then store in refrigerator.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
