Passionfruit Butter

  • 300ml Fresh Passionfruit Juice
  • 100 grams sugar
  • 150 grams Butter, cubed, salt free, not margarine
  • 6 eggs
  • zest of one lemon, optional

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place zest and sugar in TM bowl. Mill speed 9 for 10 seconds. 

    2. Add all other ingredients to TM bowl and blend for 8 secs/ speed 4. MC on. Scrape sides with spatula. 

    3. Then 16 min/ 85°/ speed 3 MC off with steaming basket sitting on lid to allow steam to evaporate but no splashes. 

    4. Pour into sterile jars. 

    Store in the fridge.

Tip

*To juice your passionfruit, scrape the passionfruit pulp into the TM bowl with butterfly attachment. Whisk on speed 3 for approximately 20 seconds to separate the juice from around the seeds.  Once satisfied you've removed all the juice, strain through the steaming basket.

*Zest is optional but will help your passionfruit butter to set.

    Delicious. I missed the step about separating juice from seeds, but no complaints. I only had 220g of passion fruit (about 6 fruit) so topped it up with lime juice. Made 2 x 375g jars with a little left over to lick out Tongue

  • I only had 190g of

    I only had 190g of passionfruit (would have had more if I'd left the seeds in) But i topped it up with 110g fresh lime juice. Also only used 5 eggs (our chickens lay big ones!) and it's worked beautifully
