Quince relish for Irina
- 750 grams of quinces, once peeled and cored and chopped into 2-3cm dice
- 1 brown onion, peeled and quartered
- 160 grams of brown sugar
- 250 grams of apple cider vinegar
- 1 long red chill, halved
- 1 level tsp of minced ginger
- 1/2 teaspoon of cinnamon
- 1 clove
- 1/2 teaspoon of ground corriander
- 1 bay leaf

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add quinces, onion and chilli to the bowl - chop 5 seconds speed 5 - stir the bottom to the top with your spatula and repeat
Now add all the other ingredients and cook 30mins, 100 deg, speed 2 - MC off basket on top
Scrape down the bowl and cook again 30 mins, 100deg, speed 2
Pour into steralised jars
NOTE for those that only like a light chilli taste use a half -- then taste test at the half way mark as you can always finely chop the other half and add to the relish

Thanks for this recipe, I was looking for something other than Jam or paste to use up my Quinces, I have made 3 lots today and it smells, looks and tastes great, thanks again
