Strawberry, Vanilla Bean and Raspberry Vinocotto Jam

  • 500 grams Fresh strawberries, hulled
  • 250 grams raw sugar
  • 2 tablespoons Raspberry Vinocotto
  • 1 tablespoon Vanilla Bean Paste (or seeds only from 3 Vanilla Beans)

Recipe's preparation

  1. Hull strawberries and wipe with a damp cloth.

  2. Place all ingredients into the Thermomix bowl and cook for 15 minutes,     100 degrees, speed 1.  Test jam consistency by dripping a drop of jam on to a cold ceramic plate.  If desired consistency is not acheived - cook for a            further 3 minutes, 100 degrees, speed 1. 

  3. Remove scum from the top of the jam by scraping with spatula.  Discard.  Pour jam into pre-sterilsed jars and seal.
