Sweet Corn Relish (and sweet corn dip)

Ingredients

  • 1 red onion, peeled and quartered
  • 2 vine-ripened tomatoes, halved
  • 2 fresh Corn cobs, kernals only
  • 10 g balsamic vinegar
  • 1-2 heaped teaspoons sae salt
  • 100 g raw sugar
  • 1/2 level teaspoon tumeric powder

Recipe's preparation

  1. Place onion in TM bowl and chop for 2 seconds on speed 5.


    Add tomatoes and chop for 3 seconds on speed 5.


    Add remaining ingredients and cook for 12 minutes at 100C on REVERSE + speed soft.


    Taste and adjust the sweet/sour/salt balance to suit your tastes by adding more sugar/vinegar/salt. Pour into sterilized jard and allow to cool before putting lid on and storing in fridge.


     

  2. To make the sweet corn dip simply place 250g softened full fat cream cheese into TM bowl with half a cup of corn relish. Blend on REVERSE for a few seconds to combine. Add more relish if you like a stronger flavour!

    Have made this many times, a fave in our house. Easily altered to Fructose Friendly by swapping leek for onion and coconut sugar for raw sugar. Lactose free cream cheese works well, too.

    Yes- it is yummy! It's so versatile too! A jar in the fridge is great to tart up a sandwich, turn into a simple dip, add flavour to a cold meat and salad dish, add to a chicken pie filling or a pasta dish as well as accompanies a cheese platter perfectly. I love it when fresh corn is in season as it gives ithe relish that extra crunch which is missing when you have to substitute frozen corn!
