Tomato sauce (Healthy)

  • 1200g fresh tomatoes
  • 1lg Granny Smith Apple
  • 1lg red onion
  • 2 cloves garlic
  • 3 Heapy tsp celtic or himalayan ground salt
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cloves
  • 1 tsp mustard powder
  • 120g apple cider vinegar
  • 10 Basil leaves
  • 2 tsp fresh thyme leaves, (or 1 tsp dried)
  • 1/2 tsp pure stevia extract powder, (not natvia)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Preparing the tomatoes:
  1. Slice the tomatoes in half then each half into 5 wedges.

  2. place them all on a lined tray and bake in the oven 180°c for 45 - 60 min

  3. Make the sauce:
  4. Wash, core and cut the apple into quaters and put in the bowl

  5. Cut the onion into quaters and peel the garlic, add them to the bowl

  6. Chop 4 seconds / sp 7

  7. Add the roasted tomatoes and all remaining ingredients, before chopping again for 4 sec / speed 7.

  8. Cook 20min / 100°c / speed 2.5

  9. Puree for 1min going slowly to speed 9

  10. Bottle and seal

Tip

Tomatoes vary in their water content. The longer you roast them the drier they are. If you are finding your sauce a bit thick, add small amounts of water and blend for 4 sec / speed 4 until desired consistency.

 

You don't have to roast the tomatoes (I just think it makes for a richer more superior flavoured sauce), just quater the tomatoes and add them in step 6, cook for 25 min instead of 20.

    Great tasting! I used a medjool date instead of the stevia tmrc_emoticons.) hide it in a normal sauce bottle and no one knew the difference!
