Ingredients

Zucchini Pickle

  • 1000 g zucchini
  • 2 large onions
  • 1 cup celery
  • 3 tbsp salt
  • 1 red pepper
  • 1.5 cups white sugar
  • 1 cup white vinegar
  • 3 level tablespoons vinegar
  • 1 tsp tumeric
  • 1 tsp dry mustard powder
  • 1 tsp curry powder
  • 3 tablespoons cornflour

Recipe's preparation

  1. Place onion in bowl and chop on Speed 7 for 4 secs or until desired size is reached. Place in a large bowl.
  2. Repeat with zucchini and celery and add all to bowl and mix. Sprinkle over 3 tablespoons of salt and allow to stand overnight. Next day rinse with cold water.
  3. Place quartered red pepper in bowl and chop for 3 secs speed 5.
  4. Scrape down sides of bowl then add sugar, and 1 cup of white vinegar. Cook on varoma, reverse, speed 2 for 15 mins.
  5. Mix 3 tablespoons of vinegar with the tumeric, dry mustard powder, curry powder and cornflour. Add this to pickle mix and cook for 10 mins, reverse Varoma speed 2.

    Once cooked place into sterilised jars and set aside to cool
