- 455 grams brown onion, Quartered
- 850 grams Zucchini skin on, Roughly chopped
- 1 Cup of Apple Cider Vinegar
- 200 grams Rapadura Sugar
- Qtr Cup of Rice flour, (I use Brown rice flour)
- 1 heaped tablespoon curry powder
- 1 heaped tablespoon Dijon mustard
- 1 tablespoon turmeric powder
- Quarter Cup of Apple Cider Vinegar
- 11/2 teaspoons salt

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Weigh onions into bowl. Chop speed 6 for 5 seconds.
Add washed zucchini, chop speed 4-5 approx ten seconds or until it looks like coleslaw from KFC
Add 1 cup of Apple Cider vinegar and the sugar.
Combine for 5 seconds "Counter-clockwise operation" speed 4.
Put steamer basket on lid in place of mc. and cook 15mins/100 degrees/Reverse/Sp2
(Have your washed jars in the oven at about 120 degrees)
Add flour, curry powder, turmeric, mustard, salt and 1/4 cup of Apple Cider vinegar. Combine "Counter-clockwise operation" speed 4, 20 seconds.
Cook 13mins/Varoma/ "Counter-clockwise operation" / speed 2.
Taste prior to bottling. If taste has too much zing for your liking cook a further 4 mins.
Bottle while hot.

Tip
Delicious with cold/hot meats and in toasted sandwiches. For a spicier twist use hot mustard. Great as a dip with cheese & biscuits too.
