Ingredients

4 portion(s)

Slaw:

  • 5 carrots, (Peeled)
  • 1/4 Cup flaked coconut, (Shredded or fresh is great too)
  • 3 shallots, (Ends trimmed, Diced)
  • 1/2 cup coriander, (Chopped)
  • 1/4 Cup cashews
  • 2 tsp EVOO (extra virgin olive oil)
  • 1/2 lemon, juiced
  • 2 Drops of rosewater

Recipe's preparation

    Slaw:
  1. Place all ingredients into Closed lid

     

    Mix 3 seconds, speed 5

     

    Done!!

    Great, fresh salad. Sometimes I sub the lemon for orange. I call it 4Cs salad - Carrot, Coconut, Cashew, Coriander!
