Cauliflower Tabouli Style Salad

  • 1/2 bunch mint
  • 1/4 cauliflower
  • 1 lemon, juiced
  • 1 tbsp olive oil
  • 1 Lebanese cucumber, finely chopped
  • 1/4 Capsicum, finely chopped

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cauliflower Tabouli
  1. Place parsley (leaves and stems) and mint leaves in TM bowl. Chop speed 6/10 sec.

    Remove and set aside. 

    Place cauliflower, lemon juice and olive oil in TM bowl. Blitz on turbo setting 4-5 times or until the consistency resembles couscous. 

    Combine the chopped herbs, cauliflower couscous, cucumber, capsicum, and pomegranate. 

    Season with salt and pepper to taste.

Tip

Pairs perfectly with grilled lamb kebabs. Serve with flat bread and middle easter dip such as hummus.

    Did not taste good and not the right consistency. It was all like mashed raw cauliflower. I put pomegranate as well but it didn't taste good at all. Threw all to the trash bin.  tmrc_emoticons.(
