Cauliflower rice

  • 400 g cauliflower, Cut into florets
  • 100 g zucchini, Cut into wheels
  • 2 stalks spring onion/shallot
  • 1 heaped tablespoons cashew nuts, optional
  • 1 level tsp olive oil
  • 1 to taste salt, herb, and pepper

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cauliflower Zucchini rice
  1. Cut the cauliflower into florets, cut the zucchini into 2cm thick wheels and add the spring onion and cashew nuts (optional).
  2. Chop / shred all ingredients in bowl on reverse speed 4-5 for 4-5 seconds;
    Scrape down the sides with the spatula.
    Remember on Counter-clockwise operation and do not chop too fine.
  3. Add 1 tablespoon olive oil;
    add salt and pepper to taste and then:
    Cook 3-6 min on reverse Counter-clockwise operation at 100 degree C on speed 1.
    Cook longer depending on how soft you like it.
    No need to add water just wash the cauliflower before shredding.

Tip

I usually cook it for 3mins because I like it to have it a bit crunchier.
The cauliflower holds lots of water so when you wash it and cook no need to add extra water.
This recipe is for 500g vegetables and if you want to do more I recommend to process them in badges as a larger amount does not mix too well when cooking.
Last: I like to add fennel seeds to taste - but that is not everyone's flavour.
