Ingredients

Quinoa salad

  • 400 grams quinoa, Washed
  • 1 tablespoon TM Veg Stock Concentrate
  • 900 grams water
  • 3 cloves garlic
  • 1 cm fresh ginger
  • fresh coriander, Good handful
  • fresh parsley, Good handful
  • 1/2 red onion
  • 1 Punnet of cherry tomatoes, Cut in halves
  • 1 small red capsicum, Diced 1cm
  • 1 mango, Diced 1cm
  • 1 pomegranate, Seeds only
  • 2 spring onions/shallots, Sliced thinly

Dressing

  • 20 grams extra virgin olive oil
  • 1 lime, Juice only
  • 1/2 lemon, Juice only
  • 1 tbsp orange juice
  • 1 tbsp soy sauce

Recipe's preparation

    Quinoa Salad
  1. Weigh 400 grams quinoa to the simmer basket and thoroughly rinse.
  2. Add 900 grams water and 1 tbsp stock to the TM bowl.
  3. Place the simmer basket into the TM bowl.

    Cook on varoma temp, 18 minutes, speed 3.
  4. Using your TM spatula, remove the simmer basket, transfer the quinoa into a bowl and refrigerate till cool.
  5. Place garlic, onion, parsley, coriander and ginger into bowl.

    Chop for 3 seconds on speed 7.
  6. Scrape down sides of bowl and repeat.
  7. Set aside with the quinoa.
  8. Chop cherry tomatoes in half, dice the capsicum and mango, slice the shallots and stir through the bowl of quinoa.
  9. Dressing
  10. Add olive oil, lime juice, lemon juice, orange juice and tamari soy sauce to the TM bowl.

    Mix on speed 6 for 10 seconds.
  11. Mix the dressing through only when you are ready to serve.

Tip

Quinoa can be made ahead and lasts in the fridge for a week.
You could use rice or couscous instead of quinoa.
You could add/serve with shredded chicken or grilled salmon.
Ad chilli if you like a bit of spice!
