Indian Cauliflower Rice

  • 1 bunch fresh coriander
  • 1 sprig fresh mint, leaves only
  • 500 grams cauliflower, cut into florets
  • 300 grams water
  • 1 clove garlic, peeled
  • 5 grams fresh ginger
  • 25 grams olive oil
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Indian curry powder
  • 20 grams lemon juice
  • 1 teaspoon mild paprika
  • 1 teaspoon salt
  • 1 pinch tumeric powder
  • 100 grams frozen peas

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place coriander and mint leaves in the TM bowl and chop 5 seconds at speed 7.  Set aside.

  2. Add cauliflower to the TM bowl and chop 5 seconds, Counter-clockwise operation speed 5.  Check and, if necessary, extend chopping time to achieve the desired level of breakdown.  Transfer to the Varoma tray.

  3. Add water to the TM bowl and, with the varoma in place, steam the cauliflower for 6 minutes/varoma/speed 2.  Add the frozen peas and steam a further 4 minutes/varoma/speed 2, or until cauliflower is tender.  Set aside in thermoserver.

  4. Place garlic and ginger into the TM bowl and chop 3 seconds at speed 9.

  5. Scarpe down the sides of the bowl, add the olive oil, and saute 5 minutes at 100 degrees, speed 2.

  6. Add cumin, curry powder, lemon juice, paprika, salt, tumeric, fresh herbs, and cooked cauliflower and peas, combining 15 seconds Counter-clockwise operation at speed 2.  Serve immediately.

    Easy to cook and rather tasty. Our first try of 'cauliflower rice' and amazingly, the kids ate it without complaint.

    This was really flavoursome & went perfectly with our Korma chicken tonight.  I actually left the garlic out (didn't read through the recipe first and ran out of time when everything else was ready to serve, so just skipped that step).  It was a lovely change from plain cauliflower rice.

  • We really liked the texture

    We really liked the texture of this dish with a little bit of crunch.  It was easy to make and a nice tasty and healthy alternative to rice.   This seems to be a very versatile recipe which we'll make this again and try different flavours using the cauliflower and frozen peas as the main ingredients.
