Quinoa, carrot, coconut and ginger salad

Ingredients

  • 160gms quinoa
  • 4 carrots
  • 130gms raisins
  • 160gms Shredded coconut
  • 3tblspns snipped chives
  • 1 orange zest and juice
  • 1tblspn fresh ginger
  • 2tblspns olive oil
  • 3tblspns lime juice

Recipe's preparation

  1. place quinoa and 400mls water in T.M. 25 mins-90 degrees-reverse-speed 2.

    Set aside to cool.

    Place roughly chopped carrots in T.M. 3 seconds speed 5.Scrape sides. 3 seconds speed 5. Set aside.

    Place orange juice and zest,lime juice ginger,and olive oil in T.M. 10 seconds speed 8.

    Place cooled quinoa,carrots,coconut,raisins,snipped chives with rest of ingredients in a salad bowl and mix together.

Tip

I like to make this a day ahead as the raisins plump up nicely.

    My very first time eating quinoa and very enjoyable.will make again. Like others I found the quinoa gluggy even after reducing water a little and rinsing in cold water. used sultanas which were very nice

    Agree, quinoa was a bit gluggy but otherwise good flavours. I added some rocket for added nutrition and tasted great. Yummy salad overall.

    Yum! I had the same issue with the quinoa too - first time for me making it in the thermomix. I'll use a little less water next time. I also added a little less coconut (to my taste) and used sultanas because that's all I had. A really great recipe and an incredibly yummy salad. Thanks for sharing! tmrc_emoticons.-)

    My first time using quinoa and thought it looked glugy after cooking so rinsed it in cold water.  Lovely fresh salad, will be making this again Glasses
