Zucchini Fritters with Greek yoghurt

Ingredients

4 portion(s)

  • 100 g Feta (diced)
  • 2 medium zucchinis - roughly chopped
  • 2 eggs
  • 100 g gluten free flour plain
  • salt and pepper
  • 250 g Greek yoghurt
  • a handful of mint

Recipe's preparation

  1.  

    Place zucchinis & salt in TM bowl at speed 6 for 4 seconds,  take out & strain out water using hands as sieve.

    Add eggs, flour and pepper and dived feta reverse speed 4 for 8 seconds.

    Fry small spoonfulls (as you would pikelets) in coconut oil

    Serve with minted yoghurt made by processing mint on speed 7 for 5 seconds. Add yoghurt and mix for 5 seconds on speed 2.
