Broccoli & Cumin Soup

Ingredients

Soup

  • 1 Broccoli Head, roughly chopped
  • 1/2 teaspoon ground cumin, dry roasted
  • 1 onion, peeled & halved
  • 1 potato, washed or peeled and cubed
  • 1 heaped tablespoon Chicken stock concentrate
  • 600 grams water

Recipe's preparation

    soup
  1. Place onion into mixing bowl, chop 2 sec/speed 5.

    Add ground cumin and oil and saute 2 min/100°C/ speed 1.

    Add Broccoli and chop 5 sec/speed 4.5.

    Add potato, stock and water and cook 20 min/100°C/speed 2.

    When cooked, puree 50 sec/speed 10.

    Add salt & pepper to taste. You may add 50g corn flour in place of the potato, and add 80g grated cheese for additional flavour.

    Very nice as well as quick and easy to make. I added zucchini and garlic to the recipe and grated romano cheese on top at the end.

    Delicious soup Vanessa. . . . . . .the flavours of the cumin marries well with the broccoli. I added the grated Parmesan cheese. It truly made for a very tasty soup.

    Pretty good soup.

    Added a handful of baby spinach leaves half way through.

    Steamed some quinoa  while it was cooking  & put it on top of soup with a few pieces of chopped up bacon .

    Deeee-lish!! and so cheap with broccoli in season!  Used TM vege stock concentrate instead of chicken. I didn't feel the soup needed add any added cheese so served with parmesan crisps instead.  Thanks for posting.  tmrc_emoticons.)
