Broccolini, Kale & Mint Soup

All Ingredients

  • 20 grams olive oil
  • 1 onion, peeled & halved
  • 1 Leek, white part only, chopped
  • 3 garlic cloves, peeled
  • 2 Celery Stalks, chopped in thirds
  • 2 bunches Broccolini, chopped in thirds
  • 3/4 bunch Kale, leaves only
  • 500 grams water
  • 1 tablespoon Vegetable stock paste
  • 270 grams coconut milk
  • 6-8 fresh mint leaves
  • 40 grams fresh lemon juice
  • salt, to taste
  • Pepper, to taste

Recipe's preparation

  1. Add Onion, Leek, Garlic and Celery to Mixing bowl. Place measuring cup into lid and chop 3sec / Sp7.

     

    Add Oil then saute 4mins / 100 / Sp3.

     

    Add Broccolini and Kale, place measuring cup into lid and chop 3sec / Sp5. 

     

    Saute a further 3 mins / 100 / Sp3.

     

    Add Water, Stock Paste, Coconut Milk, Lemon juce and Mint leaves, salt and pepper and cook 15mins / 120 / Sp2.5.

     

    Puree 1:20min / Sp5 and gradually increasing to Sp10

Tip

If there seems to be too much Kale put half in and do the chop and then add the rest and do a second chop.

    I throughly enjoyed this winter warmer! Substituted the broccolini for one stalk of broccoli and it worked well. Will definitely be making again. Thanks.
