Butternut squash, courgette & chorizo soup

  • 450 grams courgette, cut into 2 cm pieces
  • 600 grams Butternut Squash, cut into 2 cm pieces
  • 400 grams water
  • 1 teaspoon Rock or Coarse Salt
  • 200 grams chorizo, sliced in 1 cm
  • 2 sprigs parsley, leaves only

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Butternut squash, courgette & chorizo soup
  1. Place courgettes, butternut squash, water and salt in mixing bowl.

    Place Varoma dish into position then weigh in chorizo and steam 20 min/Varoma/speed Gentle stir setting

    Add steamed chorizo to mixing bowl, then blend 30 sec/speed 10.

    Pour in a serving dish and decorate with parsley leaves.
