Carola's Pumpkin Soup

Ingredients

4 portion(s)

  • 1 onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 100 grams bacon, torn to 5cm lengths
  • 1 tablespoon olive oil
  • 1/2 teaspoon curry powder, (i use Keens curry powder)
  • 800 grams pumpkin, chopped to 3x3cm cubes (including skin and seeds if you like!)
  • 200 grams potato, chopped to 3x3cm cubes (including skins)
  • 500 grams water
  • 2 tablespoons vegetable stock concentrate, (or chicken stock paste)
  • 100 g cream, (or milk), optional
  • Chopped chives

Recipe's preparation

  1. Add onion, garlic and bacon to Thermomix bowl.  Chop 4 secs / sp 5.  Scrape down edges and add olive oil and curry powder (you could use more if you like).  Saute 3 mins / Varoma temp / Sp 1.

  2. Add pumpkin, potato and up to 500g of water (don't go over the maximum level on the jug!).  Don't worry if it looks like there isn't enough liquid added as a lot of liquid will come out of the vegetables while cooking!) Add stock concentrate and cook 25-30 mins / 100° / Sp 1.

  3. SLOWLY turn the speed dial up to Sp 4 until balanced and no longer vibrating.  Once settled, slowly turn speed dial up to Sp 9 / 1 min.  Add cream and combine 5 secs / sp 4.  Pour into Thermoserver and top with chopped chives.  Enjoy with crusty bread.

Tip

I have been making this soup for years and recently converted it to Thermomix language... the thing I love most is how silky smooth it becomes after being blitzed in the Thermomix.  Heaven... CAUTION:  Please ensure that the jug is not overly filled (anything above the 2 litre mark can cause serious burns when you are blitzing the soup smooth)

    Seems kind of superfluious to add a comment to the 217. The amount of pumpkin soup recipies. But this got a 5 star rating from the grandchildren. I used sweet potato as my husband needs more potassium. And bone chicken stock instead of water.

    It got the eclat of being printed and put in the recipe book. Thank you.

    I made this a few weeks ago and forgot to save it - so glad I found it again! I used butternut pumpkin, skin and all and it was amazing!! I highly recommend this soup. Even my fussy children who don't like pumpkin loved it.

    Great flavour, I usually don't like pumpkin soup, but I think my bacon (was smokey) gave it some real punch. I did blend soup in 2 batches as bowl was pretty full. Yummo, this one is a keeper, thank you.

    Just made this now and had it with some fresh grain bread for lunch.... very tasty 😀 Could really taste the bacon flavour, but the curry flavour was very mild so depending on your taste you could add or take away the quantities of these two ingredients... will definitely make this again.. great for winter lunches 👍🏻

    Have made this a few times now and it is always a winner. Sometimes I use the ingredients exactly as listed and sometimes I swap out the potato for sweet potato if I need to use it up & increase the curry powder to overcome the added sweetness. Forgot the curry powder once and it was still delicious. Definitely one of our faves & is even yummy without the cream for a dairy free/waist friendly alternative.
