  • 1 brown onion, Peeled and Quartered
  • 30 grams Butter
  • 600 grams chicken stock, Can substitute with vegetable stock
  • 4 large carrots, 1cm cubed
  • 2 potatoes, 1cm cubed
  • 250 grams Raw Cashew Nuts
  • 2 cm piece fresh ginger
  • 1 clove garlic
  • 50 grams cream, Optional
  • Salt and pepper, To taste
  • 1/4 bunch coriander
  • 1/2 small red chilli, Optional

Garnish

  • 50 grams Raw Cashew Nuts, Roughly chopped
  • 50 grams coriander, Roughly chopped
  • 1/2 fresh red chilli, Finely diced

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Soup
  1. Chop Onion speed 6 for 5 seconds. Scrape down sides.
  2. Add butter to the bowl and saute on Varoma temp for 3 minutes speed 1 no MC. Scrape down sides.
  3. Add Carrots, Potatoes, cashews, ginger, garlic, stock (chicken or vegetable or half/half) and the salt and pepper to taste. Cook 30min 100 Degrees speed 1.5
  4. Blend mixture from speed 4 to 8 working slowly up the speeds for 45 seconds.
  5. Add the Cream and mix speed 4 for 5 seconds. Or allow for cream to be added to individual bowl as preferred.

Tip

Coriander and chilli can be omitted if not to taste


This soup can be frozen in portions for up to 3 months.For a Vegetarian option use Vegetable Stock.The carrots and potato can either be peeled or not, depending on your own personal tastes.
