Cauliflower Soup

  • 1 clove garlic
  • 50 grams spring onion
  • 25 grams Butter, diced
  • 2 tablespoons plain flour
  • 2 teaspoons chicken stock
  • 500 grams water, boiled
  • 350 grams cauliflower, cut into florets
  • 100 grams potato, 1/2 a medium potato ( cubed )
  • 200 grams Milk
  • 100 grams bacon, chopped finely

Recipe's preparation

    Cauliflower Soup
  1. Place garlic and spring onions into TM bowl and chop for 5 secs on speed 6, scrape down TM bowl with spatula.

    Add butter and saut'e for 1 min at 100 degrees on speed 1.

    Add flour, chicken stock and boiled water set for 2 mins at 100 degress at Gentle stir setting

    Add cauliflower and potato set for 16 mins at 100 degrees on speed 1

    Puree mixture in TM to desired consistency for 1 min slowly going from speed 1 - 7 .

    Add milk and bacon for 2 min at 100 degrees on speed 2 Counter-clockwise operation    .

    I made this today and did what the previous person did added extra potatoe and no milk or flour. Cooked the bacon wth the garlic and onion. I did add more water too. Really nice soup thank you for the recipe.

    Beautiful loved this soup added 2 potatoes so didn't need to add any milk added ginger pan fried the bacon, vegetable stock, no flour then I made a 2nd round of it and added a tin of chickpeas no potatoes and mild massaman curry paste it was not a good move adding curry paste it didn't taste as good and I had to add flour to get it thick will stick to the first way I cooked it

    This soup is a winner. I have made it a few times, with the intention that I will stock the freezer, but it never manages to get there. Good consistency, bacon is a nice touch and the kids and other half loved it also.

    Just whipped up this soup for lunch as I had a small head of cauliflower that needed eating. I had no bacon so substituted with ham that I added with the onion and garlic. I also added 50gm of cream cheese that needed using up before puréeing the vegetables. I tasted at this point and decided not to add the milk.  It was a beautiful tasty soup that I will make again.

    Yummy.  I used onion instead of spring onion, olive oil instead of butter & 100ml coconut milk instead of milk for a dairy free version also upped the vege stock to 1 tbsp as I didn't have any bacon.  Garnished with fresh chives

    A lovely cauliflower soup.  Making it again today.  As I snipped the spring onions out of my garden and left the bottom to grow another shoot, I had lots of green spring onion for 50g. This made the soup a delicate green. Very interesting.  Thank you psando for a lovely recipe.

    I love how these recepies can be adapted for what you have in the fridge. I used a brown onion and one sweat potatoe! no bacon as I am a lacto vegetarian. In hindsight I wouldn't use the flour! Personally I found it rather bland so I added seasoning and some paprika. On serving a added a swirl of coconut cream, just because the tin was open in the fridge and it gave it a lovely flavour.  Thank you for sharing it was quick and easy to make ideal for a light supper.

    I made this first time as per receipe (except using veg stock instead of the chicken stock), it was pretty good.

    Second time I used brown onion as I had used all the spring onion in the first batch, veg stock again, and put in a tin of drained chick peas instead of the potato, tasted even creamier to me  tmrc_emoticons.)

    I liked this soup. Easy to make. Instead of using TM stock i replaced it with stock powder. And also, because im lazy i dont peel the potato. And another change i made was to add some double smoked ham (didnt have bacon) and blended it until smooth at the end. You can taste a hint of the 'bacon' flavor. Nice.

    Very nice soup although I made it with what I had - 1 rasher bacon (chopped and fried with onion and garlic), less cauliflower, 100g cream cheese instead of milk.  Very tasty and much bettr than a cauliflower soup I made in the past.  Good basic recipe to work with, build on or make as is.

    I made this tonight with veg stock instead of chicken, an extra approx 120-150g of cauli, an extra 100g potato instead of flour and an extra 100g bacon in with the onion and garlic. The result was a gorgeous soup that my eldest devoured 2.5 bowls of (which for a 4 year old that rarely eats was amazing). This definitely going in our recipe folder.

    Great soup! I had it for dinner, as I wasnt very hungry it was a great healhty, light option. I didint put any flour in -to keep it healthy. I added less water so it was still nice and thick... Also added grated parmesan cheese with bacon and 150ml of milk.
