Chicken and Corn Soup
- 1 onion, peeled and quartered
- 2 cloves garlic, peeled
- 1 centimetre knob of fresh ginger, peeled
- 1/2 teaspoon ginger powder
- 420 gram can of creamed corn
- 2 fresh Corn cobs, peeled and corn cut off
- 600 grams water
- 1 teaspoon sesame oil
- 2 tablespoons chicken stock paste, (I used Skinnymixers)
- 3 Chicken thigh fillets, finely sliced
- 1 tablespoon cornflour, mixed in a small bowl with 2 tablespoons of water
- 2 egg whites
- spring onion, to serve

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add onion, garlic and fresh ginger to the bowl.
Chop 3 seconds, speed 4. Scrape down sides of bowl.
Repeat 1 or 2 times until onion mix is finely chopped.
Add olive oil and ginger powder.
Saute 3 mins, 100 degrees, speed 1.
Add creamed corn, fresh corn, water, sesame oil and stock paste.
Cook 5 mins, 100 degrees, reverse speed 1.
Add sliced chicken.
Cook 17 minutes, 100 degrees, reverse speed 1.
In the last 2 minutes remove MC and drizzle in cornflour mixture. Replace MC and add egg whites by pouring onto top of lid and letting them slowly drizzle through into the bowl.
Mix speed 4 for 8 seconds.
Serve hot topped with diced spring onion.
(Note: Freezes well, just omit spring onion when freezing.)
