Ingredients

  • 100 g dried chickpeas
  • 1 tbsp vegetable stock concentrate, (see Tips)
  • 2 brown onions, cut into quarters
  • 20 g olive oil
  • 1 carrot, cut into pieces
  • 3 garlic cloves
  • 150 g turnip, cut into pieces
  • 1100 g water
  • sea salt, to taste
  • black pepper, to taste
  • 20 g Baby Spinach Leaves

Recipe's preparation

    Chickpea soup
  1. Place chickpeas into mixing bowl and mill 1 min/speed 10. Transfer into a small bowl and set aside.
  2. Place stock, onions, oil, carrots, garlic and turnip into mixing bowl and chop 4 sec/speed 5.
  3. Add reserved chickpea flour and water. Cook 25 min/Varoma/speed 2.
  4. Add salt and pepper, to taste and blend 30 sec/speed 9, gradually increasing speed from speed 1 to speed 9.
  5. Place spinach into the bottom of thermal serving bowl or other large bowl, pour in soup, stir to combine and serve.

Turnips can be substituted with parsnips or celeriac.

    Could I use canned chickpeas and replace the chickpea flour with some other thickener?

    Lovely soup. Beautiful consistency and texture. I added a sprinkle of cayenne pepper to serve to add a extra diamention. Was delish! Thank you for posting this tmrc_emoticons.)

    I omitted the parsnips because I didn`t have any, but it still tasted great. Very silky smooth, delicious, even loved by my 7 year old, he had 4 serves! Thank you.
