Minestrone Soup

  • 0.5 bunch parsley
  • 1 onion, cut into quarters
  • 2 cloves garlic, peeled
  • 20 grams olive oil
  • 200 grams bacon, trimmed & cut into strips
  • 700 grams Vegetables (Roughly Chopped ), carrot, zucchini, corn, sweet potato, beans, capsicum, celery etc
  • 40 grams tomato paste
  • 750 grams water
  • 1 tablespoon TM veg stock paste
  • pepper to taste

Recipe's preparation

    Minestrone Soup


    1. Place parsley into TM bowl and chop for 3 seconds on speed 7. Set aside.



    2. Place vegetables into TM and chop for 3 seconds on speed 3 (or to liking). Set aside


    3. Place onion & garlic into TM bowl and chop for 3 seconds on speed 6.




    4. Add bacon & oil to onion & garlic and sauté for 3 minutes at 100° on speed 1.




    5. Add all remaining ingredients and cook for 30 minutes at 100° on Reverse + soft speed.

    Loved this soup. Made a couple of changes to suit personal taste: omitted bacon (for a vegetarian meal) & parsley (as I didn't have any) and added 1 tin tomatoes 420g, Used the tin to add 200g approx of water, 1/2 tin of 410g red kidney beans, 1tbsp skinnymixer mexican seasoning. Was delish & thick, will def make again.

    Delish, I added frozen beans and corn to the last minute of sauteeing the bacon, then gave it a quick blitz before adding my left over vegies (zuchinni, cabbage, leak, sweet potato, broccoli and cauli), and also added a whole tin of crushed tomatoes and cut back on the water.  It looked and tasted very healthy. Thanks

    Loved this. Made a couple of changes myself also. No parsley, replaced 400g water with a tin crushed tomatoes. Added Italian herbs.


    Of course served with grated parmesan cheese in my spare bowl (or do prior to soup). Great with crusty bread - I like Tess's "Thermowhat" Bread.


    Could also add tin Borlotti Beans for more protein and fibre and give more substance.
