Coconut And Watercress Soup

Ingredients

1 litre(s)

35g Arborio Rice

  • 35 grams arborio rice
  • 1 brown onion
  • 1 celery stick
  • 1 pinch fresh thyme, you will regret using dried
  • 1 pinch Hot Cayenne Pepper, to taste
  • 2 cloves garlic, Local is best
  • 20 grams coconut oil, Organic
  • 20 grams extra virgin olive oil
  • 1 large potato, Royal Blue is best
  • 1 Large carrot
  • 1 small zucchini
  • 1 Broccoli Head, very small
  • 1 bunch Fresh Watercress
  • 2 tablespoons Vegetable stock paste, Thermomix recipe
  • 0.8 litre filtered water

Recipe's preparation

    Easy Soup
  1. Mill the 36 g of Arborio rice for 1 minute, speed 10.  Put aside.

  2. In empty bowl, place onion, celery, garlic, thyme and cayenne pepper.  Mix at speed 5 for 3 seconds.  Use discretion in applying the cayenne pepper, to taste.  You can have it mild, hot or leave it out altogether!

  3. Scrape down the sidges of the bowl, then add 20g of coconut oil and 20g of olive oil.  counter-clockwise operation Sautee speed 1, 5 minutes.


    Add diced carrot and potato for a further 3 minutes.counter-clockwise operation


    During the sautee, boil 0.8 litre of water in the kettle.counter-clockwise operation

  4. Add the zucchini, broccoli, rice flour, water and vegetable stock.counter-clockwise operation


    13 minutes, speed 1

  5. Wash watercress well, then add at the end. Poke down with spatula and it wil cook down.

    Cook for 5 minutes, speed 1.

  6. No counter-clockwise operation Whizz for 1 minute, gradually turning up the dial as high as you can without splattering the soup everywhere out of the lid.

  7. Pour to serve and eat.  This soup is soooo unbelievably good, you will keep coming back for more!

Tip

Use all fresh ingredients.  I only use the very best of everything, that way it's more delicious!

Also, you can experiment with different vegetables and substitute parsley for the water cress, but if you do, just use olive oil (only extra virgin), it will taste better.

NEVER use dried Thyme - it tastes disgusting and overpowers everything else!
