Creamy Cheesy Cauliflower Soup

Soup

  • 1 cauliflower head, Cut in florets
  • 1 brown onion, Roughly chopped
  • 1 potato, Chopped into 1cm squares
  • 1 clove of garlic, Pealed
  • 2 tablespoons Cream Cheese Spread
  • 2 tablespoons Freshly grated Parmesan
  • 1 tablespoon chicken stock paste, From basic coolbook
  • Salt and pepper, Season to taste
  • 0.4 litre pure cream, adjust to get right consistancy
  • 0.7 litre water

Garnish

  • sprig Parsley or other, Use whatever you want for garnish

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Soup
  1. 1. Add Water, Potato, Onion, Garlic and Stock Paste to the bowl

    (Onion and potato could be chopped in bowl first if so desired, the potato is to thicken the soup)

     

  2. 2. Cut cauliflower into florets and place in Varoma bowl place over lid cook varoma speed 1.5Counter-clockwise operation for 30-35 min

     

  3. 3. Remove cauliflower and add to bowl chop for 10 sec speed 7 Closed lidMC on

     

  4. 4. Add cream, cream cheese, Parmesan, seasoning to taste Closed lid and mix speed 5 for 7 sec

Tip

Use Vegetable stock to make a vegetarian version, can also leave out the cream cheese to make it a bit healthier.

Adjust the amount of cream to make it thicker or thinner, you could also use more or less water at the start to achieve the same thing with less of the cream. This was my first attempt and it came out just right for me.
