Creamy Chicken and Vegetable Soup

  • 1 bunch parsley, fresh
  • 2 cloves garlic
  • 2 heaped tablespoons Chicken paste stock, (I use Quirky Cooking recipe)
  • 1500 grams water
  • 1 pinch pepper
  • 3 spring onions
  • 3 potatoes, Cubed
  • 2 carrots, Roughly chopped
  • 2 sticks Celery, Roughly chopped
  • 2 tablespoons corn kernals
  • 100 grams cashews, unsalted
  • 500 grams chicken breast, Cubed

Recipe's preparation

  1. Put parsley into the bowl, chop speed 6 for 5 seconds. Take half out and set aside.

    Add garlic to the parsley in the bowl and chop speed 8 for 3 seconds.

    Add carrot, spring onions and celery and roughly chop speed 6 for 2-3 seconds (depending on how chunky you like it) (or pre-dice it)

    Add Chicken stock paste, water, pepper, corn and potatoes. Put the varoma into place and add the chicken to the varoma dish and cashews onto the varoma tray. Cook varoma -reverse-20minutes, speed 2. Check the chicken is cooked otherwise cook at the same setting until done.

    Pour soup into a preheated thermoserver, leaving enough in the bowl to cover the blades (try to leave most of the potatoes in the bowl). Add the cashews to the bowl and puree speed 8 for 20 seconds (slowly turning from speed 1-tmrc_emoticons.8) until smooth. Take off the lid, scrape down the sides and, if needed, puree again for 10 seconds, speed 8.

    Add chicken to the puree in the bowl and shred for 2-3 seconds, speed 5.

    Add the soup from the thermoserver back into the jug along with the reserved parsley and mix (to thicken up) -reverse- speed 2, 10 seconds.

    Careful as its going to be very full. If there is too much liquid just add up to the 1.5L mark to combine and pour over the remainder in the thermoserver and stir.

    Consider this recipe tested and approved. I searched 'chicken breasts' in the recipe files. Your soup came up. I had 2 chicken breast in my fridge to use up.  Bingo! I'm also a fan of using cashews instead of cream. Well done. 5 star quick lunch on a lazy Saturday. Glasses
